Tasting Profile

The 2007 Hourglass Cabernet Sauvignon is rich with ripe and deeply concentrated fruit flavors. The initial attack of natural acidity provides a brightness of flavor to lift the deeper, denser black fruit. Aromatics of black licorice, mint, and dark earth mingle with toasted espresso bean. The mid-palate is broad and the density of black fruit—cassis and blackberry--drives the flavor profile while an underscore of mint and licorice lends additional layers. The tannins are ripe and polished, leading to a soft mouth feel and lingering finish.

Cellaring Potential

Current tastings indicate this vintage is a little shut down at present. This is not uncommon in years eight to ten. Our recommendation is to continue cellaring for the next several years to 2017 and then check in on its 10th birthday. Once it cycles through its current lull, it should open back up with new layers of complexity, similar to how the 2003 vintage evolved.
